Beak & Johnston’s City Kitchens Case Study
CASE STUDY Aerofloat deemed ‘top of the list’ when it comes to wastewater treatment by Beak & Johnston. The Need Beak & Johnston needed a
The busy Sydney shopping precinct needed a new wastewater treatment system that could effectively manage its high wastewater flow rates and ensure compliancy.
Aerofloat customised its patented AeroCirc DAF units to fit the available space and manage peak flow rates.
The entire system was PLC controlled and fully automated, including remote HMI in the loading dock to facilitate pump outs.

Managed by Frasers Property Australia, the large food court at Edmondson Park town centre’s busy shopping precinct boasted a wide range of eatery options including fast food shops, cafes and ice creameries.
Daily wastewater generated from the area exceeded 30,000L and therefore required a robust system to manage the peak flows and ensure compliancy with Sydney Water’s strict guidelines. Given the high flow rates, the centre was required to install a dissolved air flotation unit (DAF) instead of the standard grease traps found in smaller centres.
Frasers Property Australia contracted Aerofloat to design and install an efficient, effective and compact wastewater treatment system using its proprietary technology.
The limited space available meant that Aerofloat needed to further customise the wastewater treatment system so that it could be transported through the low clearance carpark into the rooms.
Aerofloat installed two of its patented AeroCirc (DAF) units to treat the wastewater generated from the food courts in the busy shopping precinct above. The AeroCirc DAFs treated wastewater flowing from waste streams coming from different ends of the building.
Wastewater gravitated from the food court above towards Aerofloat’s wastewater system where it was passed over a rotary drum screen to move the large food particles such as solids, labels and other foreign matter. Once screened, the wastewater moved on to the AeroCirc DAFs to be mixed with recirculated, de-gassed nano-bubbles that floated the fine suspended solids, fats, oils and grease to the surface.
The first AeroCirc DAF featured a self-cleaning hopper bottom and top scraper, whilst the second included a 15 degree bottom with top and bottom scrapers. The customised systems ensured a more compact DAF given the limited available space, whilst not compromising on Aerofloat’s automated self-cleaning design.
A rotary scraper removed the suspended solids into a sludge chute where it was pumped out into a sludge tank. The contents of the sludge tank were trucked away fortnightly utilising a self-cleaning sludge disposal system: The system cleaned the tank during pump outs to ensure no solids were left in the system and the pump out line self-cleaned once the pump out cycle finished.
The plant was built fully-automated to allow both Edmondson Park and Aerofloat staff remote visibility of the water quality, wastewater flow, and status of the equipment. The entire system was PLC controlled and fully automated, including remote HMI in the loading dock to facilitate pump outs.
Aerofloat have continued to service the plant for the centre and provide remote support as required to operators.
