Brewery and winery wastewater is typically characterised by high concentrations of soluble sugars, resulting in elevated biochemical oxygen demand (BOD), along with suspended solids (TSS) from grain residues. Fats, oils and grease (FOG) are generally low compared to other food and beverage sectors.Â
Where wastewater is dominated by insoluble solids, dissolved air flotation (DAF) systems are commonly applied to remove TSS and protect downstream processes. However, as soluble sugars are not removed by physical separation alone, facilities with higher organic loads may require biological treatment, such as sequencing batch reactors (SBRs), to effectively reduce BOD prior to discharge.
Cleaning regimes also play a significant role in wastewater characteristics. Caustic cleaning of process equipment increases the need for downstream acid dosing to maintain compliant pH levels. Aerofloat can support operators to tailor acid and caustic dosing strategies to suit fluctuating production and cleaning cycles.
