Wastewater Characteristics in Bakery Operations

Case Study: Priestley’s Gourmet Delights

A new wastewater treatment plant for Priestley’s Gourmet Delights’ brand new cake & pastry manufacturing facility.

Bakery wastewater presents a complex and variable mix of contaminants due to the wide range of raw materials and processes involved. Waste streams commonly contain elevated levels of fats, oils and grease (FOG) derived from butter, shortening, margarine, and cooking oils in doughs and fillings.

High biochemical oxygen demand (BOD) is typically generated by ingredients such as flour, starches, eggs, and dairy products, while total suspended solids (TSS) arise from particulate matter present in sauces, glazes, fillings, icings, and toppings. Load profiles can fluctuate significantly based on product changeovers, production schedules, and clean-down regimes, requiring flexible and robust treatment solutions.

Removal of Insoluble Contaminants Using DAF Technology

Insoluble contaminants such as FOG, colour, and TSS are effectively treated using Aerofloat’s dissolved air flotation (DAF) systems. These systems are supported by optimised coagulation and flocculation processes to destabilise emulsified fats and agglomerate fine solids for efficient separation. DAF treatment provides a reliable primary treatment step, significantly reducing hydraulic and organic loading on downstream processes and supporting consistent effluent quality.

Management of Soluble Organic Loads Through Biological Treatment

In addition to insoluble contaminants, bakery wastewater typically contains high concentrations of soluble sugars and carbohydrates. These compounds readily contribute to elevated biochemical oxygen demand (BOD) and, if untreated, can result in non-compliant discharges or increased trade waste costs.

Where required, Aerofloat integrates biological treatment systems to biologically oxidise soluble organic material, reducing BOD and improving overall effluent quality. Biological treatment enables cost-effective long-term compliance, particularly for bakeries with high-volume production or limited discharge allowances.

Treatment System Design for Variable Production Loads

Aerofloat has extensive experience working with large-scale bakery operators and understands the need to accommodate substantial load variability inherent in bakery operations. Treatment systems are designed to manage peak loads during intensive production periods while maintaining stable performance during low-flow or

shutdown periods. This approach ensures reliable regulatory compliance and operational resilience under changing production conditions.

Microplastic Contamination

Microplastics are emerging as a growing concern in industrial wastewater streams, including within the food and beverage sector. Generated from sources such as packaging materials, processing equipment, and manufacturing activities, microplastic particles present increasing environmental and regulatory challenges for industry. Drawing on expertise in dissolved air flotation (DAF), physical chemical separation, and advanced wastewater treatment processes, Aerofloat delivers tailored solutions designed to assist in the removal of suspended microplastics from wastewater streams, supporting improved effluent quality and long-term environmental compliance.

Proven Experience in the Bakery Sector

Aerofloat has worked with multiple major baked-goods providers to design wastewater treatment systems that can accommodate load fluctuations typical of bakery operations, ensuring consistent performance and regulatory compliance.
